This is another one of those recipes that I typed into my computer years ago and have no idea where it originally came from. I've changed it so much over the years and there are so many scribbles on the original print-out that it's quite unrecognisable! I'm blogging this as much for me as for you, so I finally have a copy of the recipe that I can actually read! This is a great weekend brunch or lunch for the family. If serving for dinner, I usually add a little 'salsa' on the side, of whatever salad veges I have on hand (tomato, cucumber, red capsicum, spring onion, avocado....). I throw together a little dressing of olive oil, lime juice, sweet chilli sauce and salt and pepper. If you want to add meat to your meal, a couple of strips of crispy bacon or some lovely smoked salmon go beautifully on top. If you're only serving a couple of people, you could halve this recipe. Otherwise, it will feed up to 6 people. If you don't have (or don't like) coriander, this also works just fine with basil and/or parsley. If you're using basil or parsley, lemon juice instead of lime in the mayonnaise would work really well. Ingredients for pancakes:

Just for a change, I thought I'd post something that doesn't involve chocolate! I know many people like to eat fish at Easter, so here's a wonderful non-traditional way to cook up some fish. I found this recipe in an old Australian Masterchef magazine, contributed by Hayden Quinn. I've not made many changes to the original. I've increased his quantities, using 1kg of fish rather than his 600g, as I've found this makes enough fish cakes for two whole meals for our family of 4. I freeze half of it and it makes a wonderfully quick and easy meal for a night where I'm pushed for time. I re-heat them in my foccacia maker/ grill-press and they crisp up wonderfully! You could also re-heat them in the oven. There's a great dipping sauce as part of the recipe, too. I usually serve the fish cakes will a little salad/salsa on the side, consisting of diced tomato, spring onion, cucumber, red capsicum, avocado and maybe some fresh steamed corn. I dress the salsa with a simple mix of olive oil, lime juice and salt and pepper. If you don't have lime juice, balsamic vinegar works well too. Yum! Ingredients

Time for a retro flash-back! I went for years not evening remembering this existed til I saw an organic corned beef in the supermarket and gave it a go. It may be a throw back to the 70's and 80's but it's still GOOD! Since then we've been ordering our beef from a farm in the Hunter Valley that pasture-raises all their cows, pork and lamb, and occasionally we'll get a piece of Corned Beef from them. It's really easy to make- you just have to be home for a few hours- you just throw a few ingredients in a pot, cover it with water and boil for 4 hours (although my mum tells me she makes this in the electric slow cooker, and leaves it on all day, which means you don't have to be home at all)! The sauce is easy too. The reason I refer to it as 'White' Sauce is because it's a white sauce base, but I add to it some of the flavour-filled liquid that the meat has cooked in...which makes it a little more brown than white! Super yummy though! It also makes great lunch/ sandwich meat for the next day. Ingredients Beef :
