Friendly food for Chocoholics

Mango Smoothie Ice Blocks

    These ice blocks just scream Summer!  So refreshing and scrumptious.
    Recently my local fruit and veg shop was selling trays of 22 mangoes for $10. Bargain! We LOVE mangoes in our house and I couldn't pass them by, even though I could see that it wouldn't be long before they would 'turn'. There's a limit to how many we can eat in a short space of time. I thought about freezing the extras, and then thought of a fun way to freeze them. Blend them into smoothies and freeze them as ice blocks. Brilliant!

Here's what I did:
  • Cut and scoop out the flesh of 4 Mangoes and place in a blender jug.
  • Add 200 ml milk (I recommend coconut milk or almond milk).
  • Sweetener of choice if desired (1-2 tablespoons pure maple syrup, rice malt syrup or honey; or a few drops of liquid stevia)
  • Add 1 teaspoon vanilla paste or extract.
  • Blend it all up until smooth and poor it into your ice block molds. Pop them in the freezer, wait a few hours and there you have it- a perfect summers day treat. The kids love them!
