My first blog post ever!!!! This has been my ultimate favourite snack for a few years now. You just blend up the ingredients, press it in to a tin, cover with a teensy bit of chocolate and put it in the fridge. It takes me about 15 minutes from opening the recipe to cleaning up afterwards. I ALWAYS have it in my fridge. The kids get it for their school morning tea a couple of days a week. It's the perfect snack to satisfy those mid-afternoon sweet cravings, and it's basically sugar-free. My friends who don't have any particular reason to follow an allergy friendly diet love it because it's so yummy and so healthy. Mine is different every time I make it, because I use whatever dried fruit, nuts and seeds I have on hand. The passion fruit are optional- if I don't have them I use a little orange juice or just plain water works. It's just to bring all the fruit together. I do love the flavour the passion fruit gives it, though. I also recommend using organic dried fruit so there are no preservatives added. INGREDIENTS
To top the slice:
METHOD Grease and line a shallow edged baking pan pan with baking paper with a small overhang. I use a 24 x 35cm (9.5 x 14 inch) pan, but if you want a thicker slice, use a smaller pan. In a large food processor, process the nuts and seeds until they resemble fine breadcrumbs. A little at a time, add the diced dried fruit, blending well between each addition, then add the passion fruit and blend till it all comes together. (If your food processor isn't big enough to cope with all the ingredients, blend the nuts and seeds first and empty them into a large bowl, then separately blend the dried fruit and passion fruit/liquid. Then combine this with the nut mix in the bowl.) Press mixture firmly into the prepared baking tray. Use a fork or spatula to press it flat and smooth out the top. Melt the chocolate with the oil (I do this in the microwave on half power for about a minute, then stir, and keep heating and stirring till melted). Spread evenly over slice with a spatula. Refrigerate, covered, for an hour or until slice is firm. Cut into desired size pieces and store in the fridge in an airtight container. |
